Zuppa Toscana (Copycat recipe)

When I was a kid, my mom remarried to a 1st generation Italian man in San Francisco. His parents moved to San Francisco from Northern Italy.

Nonna (grandmother  in Italian) was a fabulous cook and often when I visited my mom and step-dad, we’d go down the street to her house and she would cook amazing Sunday and Holiday dinners.

The only problem with these meals was that I was now spoiled. I kinda-sorta became an Italian food snob and if it wasn’t truly authentic with fresh ingredients and love in the kitchen, it’s a hard pass.

As an aside, it took me almost 5 decades to be able to make pasta sauce as good as hers. I’m almost there with the meatballs, but that will be another post.

That restaurant that is known for Zuppa Toscana is always a dissapointment for their food, except for this soup. I find it to be a true comfort food.
