Sushi/Nigiri

This was fun.
Being in Southern Arizona and going through this quarantine, I figured I would order my  Tuna, Shrimp, and Salmon on-line from a place in California. (Catalina Offshore Products…and no, I am not being paid to promote them. I am now a raving fan.)

THE RICE
I made the Sushi Rice with 1 cup rice and 1 cup water, while it was in my rice cooker I added a sprinkling of cane sugar, Sesame oil and about 2 teaspoons of Rice Vinegar. After it was cooked and cooled, I formed a large tightly packed rectangle and cut it in half, putting each half on the plate.

THE NIGIRI
Yellowfin Tuna and Salmon (both sushi grade) and butterfly shrimp.

Also on the plate, Pickled Ginger, Soy Sauce, and Black Pepper Sauce. Sprinkled on the plate are caviar and capers.

BUTTERFLY SHRIMP with Cocktail sauce

SALAD
The bottom of the bowl has several beads of anchovy paste, chopped romaine lettuce, heirloom tomatoes, a cube of cream cheese, more caviar and capers with a light drizzle of Stonewall Kitchen Wasabi Ginger Sauce

SOUP
I used a packaged Miso Soup and added green onions and some black sesame seeds

CONDIMENTS
Homemade Chinese mustard (1/2 cup dry mustard, 1/2 cup water, 1 tablespoon of olive oil), Wasabi, Cocktail Sauce and Mango Habanero Aioli.
