Shredded Pork – South of the Border – Shareable style.

This was a fabulous dinner for two. My wife and I love shareable meals. We have a bottle of wine or a few beers and share our meal over a movie.

Starting at the bottom of the plate.

  • Steamed White Rice
  • Refried Beans
  • Guacamole.  Avocado, lots of garlic, a touch of lemon juice, salt, pepper, more garlic, cilantro…and a little more garlice
  • The Pork Shoulder was cooked in a pressure cooker. I poured a tall Pacifico into the Pressure cooker and raised the pork so it was sitting slightly above the liquid. After 60 minutes, it was perfectly cooked, tender and shreddable.
    The reason I didn’t add any spices to the pork was so I could use it for a variety of meal options. The beer steams the meat and helps to break it down.
  •  The Salsa. I will be posting a recipe for this salsa over the weekend. A friend gave me some peeled and crushed New Mexico Hatch Chilies. This was the star of the salsa. More on this in another post
  • Sour Cream to tame the garlic from the guacamole and the heat from salsa.
