Rack of Lamb – Cajun Style

Rack of lamb with Cajun Seasoning (you can search for my recipe on this site)
Heat up a cast-iron skillet with about 2 teaspoons of olive oil until it starts lightly smoking
Drop in the rack of lamb with the side that has the most fat down into the skillet
Cook approximately 5 minutes on the fat side, flip over and cook about 3 minutes on the other side. Flip again if too rare.
Check with a meat thermometer and aim for about 120 degrees. When done, pull out and let it rest for about 10 minutes.
Slice rack to your desired servicing size

Served with hollowed-out Baked Potato with Sour Cream, au jus, Garden Salad and Jalapeno Jelly.
