Starting a batch of pineapple, rum, tomato, ginger, jalapeno, cilantro salsa
- Whole Fresh Pineapple – trimmed down and sliced into small chunks
- 2 tomatoes – chopped
- Ginger Paste – about 2 teaspoons
- 2 Average size Jalapenos – finely chopped
- Cilantro – fresh – about 1/8 cup finely chopped
- 2 shot-glasses rum
Cook all of this on low heat until the alcohol dissipates. Take a wooden spoon and break up the pieces of pineapple.
Refrigerate and enjoy with a variety of meals.
