Pineapple Salsa

Starting a batch of pineapple, rum, tomato, ginger, jalapeno, cilantro salsa

  1. Whole Fresh Pineapple – trimmed down and sliced into small chunks
  2. 2 tomatoes – chopped
  3. Ginger Paste – about 2 teaspoons
  4. 2 Average size Jalapenos – finely chopped
  5. Cilantro – fresh – about 1/8 cup finely chopped
  6. 2 shot-glasses rum

Cook all of this on low heat until the alcohol dissipates. Take a wooden spoon and break up the pieces of pineapple.

Refrigerate and enjoy with a variety of meals.
