I made this in the air fryer (no grease or oil) and used chickpea crumbs instead of panko.
This was very simple at took about 15 minutes from start to finish.
- Cut Avocado in half, remove the pit
- Gently remove the skin (I use a spoon)
- Cut each half lengthwise into thirds (6 pieces total)
- Get two bowls…make an egg wash in one, add the panko or chickpea crumbs in the other.
- I whisk the egg until it well blended and then add a little heavy cream to thin it slightly. Blend.
- Dip Avocado pieces in egg wash (get it well coated) and then dip into panko or chickpea crumbs (coat fully)
- Put into air fryer basket.
- Cook for about 9 minutes at 400 degrees
- Serve with your favorite sauces. Pictured is Louisiana Hot Sauce and Green Sriracha.
