Latkes

Tradition? Oh hell no. Tradition means that you don’t have enough creativity to improve upon things.

Here is my spin on a potato latke.

Store-bought hashbrowns, onion, diced jalapeno, panko bread crumbs, parsley, 3 eggs, salt/cracked pepper.

Then, EVOO painted on both sides and baked at 450 degrees for about 30 minutes.

Out of the oven…a huge dollop of sour cream and my jalapeno/rum/pineapple salsa from the other day.
