Jambalaya

It all starts with bacon…once I rendered the bacon, I added onions, sweet peppers, yellow bell pepper, garlic, celery salt, pepper, and jalapenos. The first step was to get these so they were starting to get transparent.

Red wine – about 1 cup.
Ground Turkey
Chicken Thighs,
Andouille Sausage

When the turkey and chicken were starting to get about medium rare, I added in 1/2 can of tomato sauce, shrimp, and chicken stock and let this cook down for about 45 minutes.

During the last 20 minutes, added a can of kidney and white beans plus cooked brown rice and about 1/2 cup of pineapple chunks.

Served with Louisiana hot sauce and red pepper flakes.
