Hasselback Potatoes

Here is my recipe for Hasselback potatoes. As an aside, this recipe originated in Sweden. 

Ingredients (Serving for 2):

  • 2 medium potatoes (Russet or Yukon Gold work well)
  • 3-4 cloves of garlic, minced
  • 4 tablespoons of butter, melted
  • Olive oil
  • Salt
  • Pepper
  • Fresh herbs (like thyme or rosemary)

Instructions:

  1. Preheat your oven to 425°F (220°C).
  2. Wash your potatoes well and pat them dry.
  3. Place each potato between the handles of two wooden spoons or chopsticks. Slice the potato into thin slices, stopping just before you cut through so the slices stay connected at the bottom.
  4. Insert garlic in between the slits of the potatoes.
  5. Brush the potatoes with half the melted butter, and get between the slices. Drizzle with olive oil and season generously with salt and pepper.
  6. Bake for about 60 minutes, or until the potatoes turn crispy on the edges and are easily pierced in the middle with a knife.
  7. Halfway through baking, brush the potatoes with the remaining melted butter to ensure they bake evenly and get a nice golden color.
  8. Once they’re done, you can sprinkle the potatoes with fresh herbs.

Enjoy your Hasselback potatoes! They can be served as a side dish and are especially good with roast meats.
