Lunch Time!
For dinner tonight, I am making Beef Stew with kosher, grass-fed stew-meat from Trader Joes.
I pulled out and shredded a few pieces of the beef, cut out some small circles of Gluten-Free Tortillas, added some Tomato/Hatch Chili Sala, a tiny dollop of mascarpone and a finely sliced piece of jalapeno.
Perfect light lunch for the wife and I.
