Gluten Free Chicken and Waffles

This was a team effort between my wife and me. She made the Gluten Free waffles, I made the chicken.
The waffles were made from Pamelas’ Gluten-Free Bread Mix. She added a 1/4 cup of nut flour and rice flour, plus baking soda and baking powder and a touch of salt. To this, she added a cup of coconut-almond milk

 

The chicken was first dredged in Kruteaz Gluten Free Flour, dipped into an egg wash and then into some Potato Flour Panko.

I added Old Bay Spice, Salt, Pepper, and Cayenne to the Panko Mix. I cut the chicken breasts in half so they would cook faster in the air fryer. These cooked at 375 degrees for about 25 minutes. The result was an amazingly crisp coating and juicy chicken inside.

I never serve anything on a plate that cannot be eaten. The rosemary is just so the picture was not a sea of brown food.

Served with Maple Syrup and Tapatio (or your favorite hot sauce)
