Bacon wrapped Grits

I made this recipe up on the fly…I had leftover creamy, cheesy grits. I didn’t have enough for a side-dish or a full meal and started thinking about some creative stuff that I could do with these as I hate throwing food away….especially when those grits were the best that I have ever had.
Although I show three on a plate…two are really filling and should probably be the service size.

So…what else could you do?

  • Side dish to a piece of fried chicken and drizzle maple syrup on the whole thing,
  • sit these on a salad with olive oil and balsamic vinegar dressing
  • Eggs…my favorite is poached or sunny side up. Serve with one or two.

Since this is a pretty savory dish, this gives you options to do a lot with this. Enjoy!

Here are the components

  1. Bacon
  2. Leftover Grits
  3. 1 egg
  4. 1/8 cup of Heavy Cream
  5. Sauces…what I have in the picture are Green Sriracha and Sweet Chili Sauce.
  6. Panko or what I am using, Chickpea Crumps
  • Whisk the egg and the cream in a bowl to make a wash.
  • Pour the panko into a very dry bowl
  • Roll the leftover grits into balls about 1-1/2 ” in diameter (2″ max)
  • Dip the balls into the egg mixture
  • Dip into the panko and cover completely
  • Wrap the balls with bacon – stick a toothpick in them to keep the bacon from unraveling.
  • I cooked these in an air fryer for about 15 minutes at 400 degrees.

Serve on a plate with the two sauces.
