Avocado Deviled Eggs

This was a fun and quick breakfast. We always have a bunch of hard-boiled eggs on hand.

3-eggs

1/2 avocado (ripe)

Take the yolks out of the eggs and blend the avocado and the egg yolks, adding a little salt, pepper, a few drops of hot sauce, until you get a ‘more smooth than chunky’ texture.

Fill the eggs.

I took a couple slices of pancetta and microwaved them on a paper towel for about 30 seconds. When the pancetta gets cool, it becomes slightly crunchy as the fat has burned off.

I lightly sprinkled red hatch chili salt over the eggs and put a small pit of the crunch pancetta on each one. You could also use paprika.
