Ahi Poke Salad

Ahi Poke Salad is all about the freshness of ingredients.
There are a lot of Poke Fastfood joints that don’t use sushi-grade ahi and that can be off-putting. Not much worse than old ahi.
I get my Ahi from a place in San Diego that delivers to us here in Southern Arizona via FedEx, nicely secured in dry ice.
I slice up the ahi in cubes first and set those aside.

Each time I do this, it’s slightly different. This batch started with hot sesame oil, regular sesame oil, miso paste, mirin, leafy cilantro, a little avocado, ginger, soy, macadamia nuts, heirloom tomatoes, and a little jalapeno, and then I mix in the ahi, add a few sesame seeds and top it with caviar.
