A couple of nights ago, I cooked some baked “fried chicken’ and had a lot of leftovers.
Since this chicken was already cooked, there was no reason to make a marinade. Using leftover chicken and some fresh or frozen green beans, you can knock this out in 15 minutes or less.
Ingredients.
1 or 2 pre-cooked chicken breasts sliced into 1” chunks.
Fresh or frozen green beans (I used frozen)
Let the green beans defrost and slice up your chicken.
Sauce
- 2 tablespoons brown sugar
- 1 tablespoon cornstarch
- 1 tablespoon of apple cider vinegar
- 5-6 tablespoons of soy sauce
- 1 tablespoon of balsamic vinegar
- 2-3 cloves of minced garlic
- 1 teaspoon fresh or powdered ginger
- 1 tablespoon of oyster sauce
- 1 teaspoon of sesame oil (I used spicy)
In a saucepan, add all of these ingredients and being very careful, cook on a low heat and keep stirring until all of this is blended together and starts to thicken.
In a wok or large frypan, brown your green beans in about 1 tablespoon of vegetable or peanut oil. Keep turning. When they start to get a little brown, add all of your chicken and then your sauce.
Keep stirring until all is coated and hot. Serve with Steamed Rice.
