World’s Ugliest Jalapeno Poppers

This may be the ugliest thing that I have ever created…but, they taste really good.

I bought an air fryer earlier this week and have been experimenting with a variety of things.

JALAPENOS

  • Get the largest ones that you can find as you will be adding a cheese filling.
  • Slice off the top portion where the stem is and throw them away.
  • Split the jalapenos lengthwise and then with your thumb, scrape out the seeds and get as much of the white vein like material.
  • I washed my hands about three times and later when I went to the bathroom….well, let’s just say I set myself on fire. You may want to wear gloves. Just be sure you really scrub your hands when you are done. The oil on the skin is pretty caustic.

FILLING

  • I made a filling with about a half-cup cream cheese, quarter cup mascarpone, and finely shredded mozzarella. Blend this really well. You can use any kind of cheese depending on your preference.
  • Fill the jalapenos with this mixture

COATING

  • Crack two eggs in a bowl and mix until the whites and yolks are well-blended
  • In a larger bowl pour in Panko Bread Crumbs. I am experimenting with Gluten-Free products as my wife has sensitivities to gluten these days.
  • Dip the stuffed jalapenos in the egg wash and then coat the jalapenos with the Panko
  • Put the coated jalapenos in the Air Fryer Basket

COOKING TIME

I used the french fry setting and set the timer for 25 minutes. As you can see from the picture, they are ugly as hell…but really tasty.
