This was amazing
- Wild Catch Alaska Salmon.
I baked this skin side up in the oven at 450 degrees for about 25 minutes with Mandarin Oranges, Lemon Slices and Fresh Dill
On the underside is a dollop of cream cheese
On the top is a puree of pineapple, mandarin oranges, lemon juice and a pinch of salt, pepper and red pepper flakes.
On top of that are capers and more lemon juice - We have an organic grocery near us, I bought (and served) Pesto Ravioli. Under the ravioli is a smear of Pesto with Toasted Pine Nuts. On top is parmesan cheese and a drizzle of EVOO.
- Organic Green Beans with just a touch of sea salt
